The wild blackberry is at the rendezvous of this end of summer. A juicy little berry of dark purple color with a sweet and sour taste, the blackberry evokes for many of us the nibbling on the edge of the wild hedges, the still warm jams we just put in pot. So much sweetness for a fruit coming from the bramble and pushing on its thorny lianas …. a certain paradox.
We find in the region a lot of wild blackberries with fleshy berries … not too much … just what it takes, and especially not dried up by the powerful sun of July.
This is how the wild blackberry is found in a dish prepared by eric Pras, PINTADE, RIS DE VEAU & FOIE GRAS
